Summer Time Sweet Corn Recipe at The Market at Del Val

Move over, spring. Summer is coming in full swing! The farmer market’s bins are getting filled with local goods such as peas, beans, asparagus, raspberries, blueberries, tomatoes, cherries, and SWEET CORN! That’s right, just in time for July 4th! And not only does sweet corn taste great, cooking and eating it can provide you with amazing health benefits.


A study conducted by Cornell University food scientists found that cooking sweet corn increases its antioxidant activity. Antioxidants are known to stop free radicals, which can return a reduced risk of heart disease, cancer, cataracts, and even Alzheimer’s. Sweet corn is high in calories, however, so stick to one serving!
 
Local farmers market The Market at Del Val is your local source for fresh and local sweet corn! Starting this July 4th weekend, the sweet corn available in the market will be from their sister location, Shady Brook Farm. Located at 2100 Lower State Rd., Doylestown, stop down to get fresh sweet corn, local lettuce and tomatoes, and homemade guacamole for your Fourth of July Picnic!

Here is a great party recipe for your fresh sweet corn, provided by The Kitchen by JustFood at The Market at Del Val:

Sweet Corn Fritters

Yield: about 75 Fritters

Time: 45 minutes (depending on size of pan)

Ingredients

8 ears Corn on the Cob, shucked

1 cup Diced Red Onion

¼ cup Chopped Garlic Scapes

½ cup Diced Red Bell Pepper

2 tsp Granulated Garlic

1 tsp Cayenne Pepper

1 TBL Cumin

3 Eggs

1 ½ cup Milk, Whole

2 cups Biscuit Mix

2 cups Vegetable Oil



Instructions

1. Grill corn cobs for approximately 5 minutes

2. Cut grilled corn from the cobs

3. Combine all ingredients except vegetable oil

4. Heat oil in a deep pan to 350˚

5. Scoop ¼ cup portions in hot oil

6. Brown on each side

7. Cook in hot oil for approximately 5-8 minutes

Make sure oil heats back to 350 before each new batch

Serve with a side of spicy sweet Stonewall Kitchen sauce of your choice!
